Salsa-ish

A while back in Hawaii I went over to Audrey’s house. She had chips and salsa for us. I have been obsessed with it ever since. She told me how to make it and it was TOO easy. Sometimes I don’t follow all of the rules and it never tastes the same as the last batch but we eat it on everything. Michelle also posted a salsa recipe that is similar but she uses fresh tomatoes. Her recipe is a little fancier than this.

You will need one CAN of whole tomatoes.
-A handful of chopped up onion (half a medium one maybe. Unless you really like onion…)
-A few random peppers (here I used 3 jalapenos from my little plant outside! That made me happy. Use whatever you want and however many you want.)
-Salt and garlic powder
-And if you want it, some chopped up cilantro. I ran out 🙁

Toss the chopped onion and peppers into a blender. I put them in first so they are closer to the blades and blend better. Not sure if it makes a difference but it makes sense in my head.

Next add your maters. I usually dump all but 2 from the can. I think when I use it all it tastes too tomato-y. I guess I could just add more of everything else and not waste any. But I don’t.

If you have cilantro toss it in now. Then pour on some garlic powder and some salt. I don’t measure anything. Just dump it in there…but not TOO much. Unless you like garlic/salt…in that case go for it.

Finally, blend and store. That’s it! So simple. And so tasty. But not chunky. If you like chunky salsa go somewhere else. Or use fresh tomatoes and a food processor. But I don’t do chunks. Now go make it and enjoy it!

  2. this is why i buy jacks special from publix …. lol !!! NO chunks, i might have to just make my own. 😉
