• Find It Friday – Recommend

    Happy Friday Yall!

    This week’s work is Recommend. Honestly I wanted to take a nekkid picture of Timmy because all week I have had Alanis Morissette’s You Learn stuck in my head.

    Lots of recommendations.

    But instead I have nothing super fancy. Just some good ol’ Pumpkin Spice Kisses.

    Holy moly.

    I’ve seen this in multiple Pinterest recipes but was never able to find them before. While grocery shopping this week I saw them AND they were on sale! I grabbed 2 bags.

    At first I was nervous. I love all things pumpkin but still wasn’t totally sure.

    But they are amazing. And now I need to bake them into some cookies or something. Except that would mean turning on my oven. Ick

  • The Day After – Coming Out of the Food Coma

    I’m pretty good…ok REALLY good at picking out all the little annoyances and anything that can be wrong during my day. Of course since yesterday was Thanksgiving I was able to look past all the ‘bad’ and be more aware of what I am really thankful for. Something I should do more than one day a year.

    This has been a big year for us and I have a LOT to be thankful for.

    Like him. Things with this one could have been better but they could have been SO much worse. We are lucky to have such a fat healthy boy.

    And her. She has her OMG why did I have kids moments but she is the BEST big sister. She is SO smart and funny and sweet.

    Some other things topping my I’m Super Thankful For list are:

    Thomo. He’s my best friend. And for all of us surviving flight school even with the whole Birmingham drama on top of it.

    Great friends in Alabama. Some have left, some are leaving, and some are stuck here forever and I love every one of them.

    My parents. They’re far away and I don’t talk to them near as much as I should but I wouldn’t trade them for any other parents in the world.

    And again, the Army. We are well taken care of and have been places and met people that I never would have without it.

    Yesterday we went over to the Wilkins house for the 3rd year in a row (every one of our Alabama Thanksgivings)

    And on another note – Since I don’t put ANYTHING in TF’s baby book (poor second child) I just want to document here that yesterday he started clapping! Woo! And you cant keep this boy down. If he can pull up on it he will. Trouble.

    Now it’s time to go drag T out of bed and make him get the tree out so Layla and I can set it up!

  • Salsa-ish

    A while back in Hawaii I went over to Audrey’s house. She had chips and salsa for us. I have been obsessed with it ever since. She told me how to make it and it was TOO easy. Sometimes I don’t follow all of the rules and it never tastes the same as the last batch but we eat it on everything. Michelle also posted a salsa recipe that is similar but she uses fresh tomatoes. Her recipe is a little fancier than this.

    You will need one CAN of whole tomatoes.
    -A handful of chopped up onion (half a medium one maybe. Unless you really like onion…)
    -A few random peppers (here I used 3 jalapenos from my little plant outside! That made me happy. Use whatever you want and however many you want.)
    -Salt and garlic powder
    -And if you want it, some chopped up cilantro. I ran out 🙁

    Toss the chopped onion and peppers into a blender. I put them in first so they are closer to the blades and blend better. Not sure if it makes a difference but it makes sense in my head.

    Next add your maters. I usually dump all but 2 from the can. I think when I use it all it tastes too tomato-y. I guess I could just add more of everything else and not waste any. But I don’t.

    If you have cilantro toss it in now. Then pour on some garlic powder and some salt. I don’t measure anything. Just dump it in there…but not TOO much. Unless you like garlic/salt…in that case go for it.

    Finally, blend and store. That’s it! So simple. And so tasty. But not chunky. If you like chunky salsa go somewhere else. Or use fresh tomatoes and a food processor. But I don’t do chunks. Now go make it and enjoy it!

    They sure hit the nail on the head with that one. Today was a good day though. Layla and I had a great Valentine’s Day together. A day of cleaning, grocery shopping, and finally cookie making. Earlier this week I had cut out some hearts and had Layla decorate them for me.

    We’re having some friends over tomorrow for a late bday party for L that isnt an actual bday party because we said no gifts and theres no cake…more just an excuse to have people over. So we made cookies.
