I don’t bake. I’m not very good at it unless everything comes from a package and I just add water or milk. I’m an add 1 ingredient type of gal. Anyhow, every now and then I get the urge to channel Martha Stewart and whip up something fatty and good. Today was one of those days. I was flipping through The 4 Ingredient Cookbook and found some peanut butter cookies that I had everything to make. All FOUR ingredients. I know…watch out 😉 Before I go into details about how I screwed up something so easy I’m going to give you the original recipe straight out of the book.
Stuff:
1 cup crunchy peanut butter
1 cup sugar
1 egg
1 teaspoon vanilla
Do it:
Mix everything together. Roll into 1 inch balls, drop on cookie sheet, press with a fork. Bake for 10 minutes at 350*.
Easy peasy right? Not for me. I really think I’m baking impaired. I thought too hard about this easy recipe and decided I NEEDED to make it healthy. Splenda instead of sugar. Sounds good, right? I thought so. And this is what happened…
1/2 cup Splenda = 1 cup sugar…so that’s what I poured in the bowl.
Next I scooped in my cup of peanut butter.
Everything is looking good and I’m totally stoked that I’m going to make some yummy cookies…and then I stir it. I have a bowl of peanut butter and egg. With a couple grains of fake sugar. This is when I realize I prolly needed that FULL cup of sugar to hold it all together. Oops. So now I cant add more Splenda I think because it would be way too sweet and that stuff is expensive! Plan B was to throw it all away and pretend it didn’t happen. Then there was Plan C which was the winner. Say the cookies are healthy because you used Spelnda but don’t tell anyone about the extra REAL sugar that was dumped in the bowl until the mixture was more dough and less peanut butter mess.
So that’s what I did. And it was beautiful.
Just ignore the sugar canister behind the bowl. Because there’s no sugar in these cookies…just Splenda. And that makes them healthy 🙂
So I plopped gobs of the dough/stuff onto my cookie sheet and baked for 10 minutes. And then 3 more because they weren’t so much 1″ balls. They turned out REALLY well actually considering the mini panic attack in the middle. And they’re not this orange. My kitchen just hates me with color.
