A Long Day

Yesterday I told Layla that as long as it didn’t rain today (lots of thunderstorms yesterday) that we would head to the park today to feed the fish. This morning it was actually chilly outside! We took advantage of the weather not being 1000*, scooped up friends, and headed to the park. First though I had to stalk the wildlife on my front porch.

We stopped to give them their lunchables before setting them loose in the playground. The excitement!

On the way home we had to stop and snap a shot of the Alabama flag. Its how I know which street to turn on.

And finally home for some pumpkin pancakes. Ive been itching to make these for almost a week now. Of course leave it to us to cancel out the healthy pumpkin by adding a shake of chocolate sprinkles to the mix.

LIGHT PUMPKIN PANCAKES

In large bowl mix:

2 c. flour
1 tbsp. baking powder
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
2 tbsp. brown sugar, packed
1 tsp. cinnamon

In small bowl, mix:

2 slightly beaten egg whites
1 1/2 c. skim milk
2 tbsp. oil
1/2 c. canned pumpkin

Add small bowl mixture to large bowl. Stir just until moistened. Heat griddle, brush lightly with oil. Pour batter by scant 1/4 cup onto hot griddle. Makes 16 pancakes.

They were kind of thick and took a while to cook but SO worth it.

  1. I’m soooo going to make those pancakes! And we have koi ponds here, neener neener poo poo! Though they’re not fun and for the public like in Hawaii 🙁
