Layla’s Honey Pancakes

Thismorning when we got up and functioning I offered to make Layla pancakes for breakfast. Thanks to Little Bear (I think that is where it came from) she has been asking me to put honey in her pancakes. Of course though, the last time I was at the store I was craving blueberry pancakes so thats what I bought mix for. And Im the only one here that wants to eat it now. So off to Google I go in search of some easy, Megan Proof, pancakes. And I found them!

INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Of course I added about 3 Tbs of honey to the mix which worked out ok because the batter was pretty thick. I was REALLY tempted to use Splenda again but decided against it…I only had 1 egg so I couldnt start over if I messed this one up 😉

They turned out awesome! Big, fat, fluffy, and the honey taste was super yum. This recipe made a TON though. Layla and I had 3 each and theres a ton left that I had to wrap up and save.

And I promise they look better than the pictures show. My kitchen still hates me and color.

Yummo! Ignore the darker one on the bottom…they dont so much bubble up like the box mix does and I forgot to flip 🙂
