It started with a Chilis commercial for their bottomless lunch special. They mentioned the chips and salsa and their enchilada soup. After that I was craving it bad. Now Ive never been very good at the “Look in the pantry to see what I can throw together to make something fantastic” way of cooking. I need a recipe, even if I dont stick to it 100%. Last night I decided I was going to make enchilada soup. And it was awesome. Fo Sho something that will be made again fairly often.
What you need:
Cooked cubed chicken. I used 4 of the frozen strips.
1 can chicken broth
1 can red enchilada sauce
1 can green enchilada sauce
1 can diced green chilis
About 4 corn tortillas cut into strips
1 jalapeno, diced
1 package of 90 second Spanish Rice
Splash of milk
Shredded cheese to put on top
Ok, now looking bad it doesnt seem like this was rocket science or anything. I pretty much chopped up everything I would have put in enchiladas but added some chicken broth and milk. Oh well. Its still freakin awesome.
I started with the chicken broth and torillas…then came the sauces, chicken, peppers and the splash of milk. It was still too thin/empty tasting so we searched around and found a package of the 90 second microwave Spanish Rice. Well, since the movers took our microwave I figured we didnt need to save it and dumped that whole sucker in. PERFECT. Just what it needed. After its all heated through spoon into a bowl and top with cheese. Oh my yum. And spicy too.
So glad I subscribed to your blog! Okay, I always cheated and bought chicken enchiladas already made at Costco. All I had to do was take them home and bake for 40 minutes on 350. I’ve never actually made them before, but they’re one of my favorite foods. Living in Japan doesn’t exactly allow for the greatest of Mexican food; there’s only one around here and I haven’t found it yet. So after my trip to the commissary tomorrow I’m going to attempt to make your soup, but minus the jalapeno since I absolutely hate spice. THANKS!!!
