Melissa has a friend that always tells her shes effing up recipes because she never actually follows them. BUT it works for her. She knows what to do to make something good.
I do not. I need a recipe. I need instructions. I still Google every time I want to boil eggs because I cant just retain information and remember how to make things right.
I wanted to make squash soup. I knew there was squash and curry powder and coconut milk. So I found a recipe and was all ready to go…until I realized there was NO COCONUT MILK IN THE RECIPE. The ones I always used in AL did. Of course I can never find the same one twice.
So I got brave and I effed up this soup recipe.
In a good way.
Here is the original:
INGREDIENTS
1 2-lb butternut squash, peeled, seeded, diced into 1/2-inch to 3/4-inch cubes, yielding about 6 cups of cubed squash (see how to cut and peel a butternut squash)
Olive oil
1 teaspoon butter
Salt
1 large yellow onion, chopped
2 teaspoons yellow curry powder
1 teaspoon whole mustard seeds (if you substitute ground mustard, only use 1/4 teaspoon)
A dash of ground cumin
1 Tbsp minced fresh ginger
4 cups chicken stock
1 teaspoon salt
1/2 cup sour cream (can substitute plain yogurt)
1/4 cup chopped fresh cilantro (can substitute parsley)
First off, I roasted the squash first. Melissa told me to. I usually listen when she tells me how I should cook things.
I measured the curry powder by the palm full. I forgot the cumin (at this point I was tired of looking at the recipe. I used a can of coconut milk, no yogurt/sour cream, and very little (like maybe 1-2c) chicken broth.
I also added chopped up celery with the onions. And garlic. OMG could I stray any more? Im sure I could.
When I added everything together and bizzed the heck out of it with the hand blender it. was. perfect.
I also threw in some dried cilantro flakes in a jar…not fresh 😐
And baco’s. The real kind.
And dunked some Kings Hawaiian sweet rolls in it. *drool*
Layla got ham and cheese sammies with her tinniest bowl of soup EVER. I knew she wouldnt touch it and needed her to eat.
I just gave Timmy ham and a roll because I didn’t want to deal with the soup/toddler mess.
But 5 seconds later he lost his mind and needed some.
I scooped some in a palstic bowl for him 4 different times before Layla gave up on it and gave him hers too.
Coconut curry squash soup with bacos is like my favorite food EV-ER.

I love an excuse to use my camera. Photo projects are super fun if I can stick with them…which usually I can’t.

I loved the photo prompts. I love scavenger hunts.
But I’m LAZY.
So, Im going to choose ONE prompt/theme each week and post a picture on Friday to go with it. I’ll add a button and a link up so anyone that wants to join along with me can. It’s just a way to make you pick up your camera and think out of the box for at least one of your pictures 😉 Something other than kids in the living room which I am GOOD at getting stuck on.
So thats that. I’ll turn that lil Find It Friday image into a button for next friday’s post.
